Allergy Awareness

Food allergies are a major concern for the dining staff because ingesting the wrong food can be life-threatening.. Scientists estimate that approximately 11 million Americans are affected by food allergies. On average, over 30,000 people visited an emergency room each year because of an allergic reaction to food. The Food Allergy Initiative (FAI) is the first organization dedicated to a strategic, comprehensive, multi-disciplinary approach to protecting those at risk. As an allergen aware food service provider, Flik supports the FAI’s mission to raise public awareness about the seriousness of this problem. We work closely with schools in helping them develop and implement a safe dining environment for all students.

Milk, egg, peanut, tree nut, fish, shellfish, soy and wheat account for 90% of all food-allergic reactions.

Firsthand accounts demonstrate that children as young as 4 years old, when taught properly, can be sensitive and aware of other children with allergies. Like all learned behavior allergy awareness must be continually stressed with our young children. FLIK Independent Schools is “nut aware” meaning Flik will not intentionally add nuts or nut products to recipes without proper notification in the way of menu signage. With the exception of peanut butter, available in the dining area, nuts have been removed from all dining hall menus. With the volume of products available to us through our distributors, it is impossible to guarantee items are “nut free” as there can be hidden traces of nuts or nut oils in some products. For example, research indicates that there are traces of nut oils in chocolate milk, but very seldom is it listed. FLIK annually trains all employees on allergy awareness. Managers constantly reinforce this training and keep all aware about cross-contamination. We work closely with our purveyors and inspect all labels on new food items before using them
